"This series of bulletins on the selection of food discusses briefly those principles of nutrition which the housekeeper should understand in order to plan meals wisely and economically They do not attempt to give definite suggestions for obtaining food at low cost nor recommend any special foods or combinations of foods. This bulletin deals with food materials which are rich in protein and tells why the body needs this nutrient and how much is supplied by different foods.
