The book begins by characterizing the global food system, identifying structural trends and emerging transformations, elements of permanence as well as opportunities for change. The author asks, how will these factors of change combine with trends of permanence? A normative strategy is adopted, namely that of the public authorities which, must ensure that individual eating behaviour, globally and in the long term, is compatible with the objectives of public policies. The book concludes by examining, in dept, the potential for renewable energy production in the agricultural sector.
