Microencapsulation and Microspheres for Food Applications is a solid reflection on the latest developments, challenges, and opportunities in this highly expanding field. This reference examines the various types of microspheres and microcapsules essential to those who need to develop stable and impermeable products at high acidic conditions. It's also important for the novel design of slow releasing active compound capsules. Each chapter provides an in-depth account of controlled release technologies, evidence based abstracts, descriptions of chemical and physical principals, and key relevant facts relating to food applications. Written in an accessible manner, the book is a must have resource for scientists, researchers, and engineers. - Discusses the most current encapsulation technology applied in the food industry, including radiography, computed tomography, magnetic resonance imaging, and dynamic NMR microscopy - Presents the use of microsphere immunoassay for mycotoxins detection - Covers a broad range of applications of microcapsules and microspheres, including food shelf-life, pesticides for crop protection, and nanoencapsulated bacteriophage for food safety

Amidst developments in nanotechnology and successes in catalytic emulsion polymerization of olefins, polymerization in dispersed media is arousing an increasing interest from both practical and fundamental points of view. This text describes ultramodern approaches to synthesis, preparation, characterization, and functionalization of latexes, nanoparticles, and numerous additional colloidal polymer systems. In chapters contributed by leading international researchers, it communicates critical parameters for method selection, presents guidelines for controlling structural and colloid properties, presents recent results and information on polymer colloids, and describes other tools to assist in the production of desirable outcomes.

The concept of using encapsulation for the immunoprotection of transplanted cells was introduced for the first time in the 1960s. "[Microencapsulated cells] might be protected from destruction and from partici pation in immunological processes, while the enclosing membrane would be permeable to small molecules of specific cellular product which could then enter the general extracellular compartment of the recipient. For instance, encapsulated endocrine cells might survive and maintain an effective supply of hormone." (Chang, Ph. D. Thesis, McGill University, 1965; Chang et aI., Can J Physiol PharmacoI44:115-128, 1966). We asked Connaught Laboratories, Ltd., in Toronto to put this concept into practice. In 1980, Lim and Sun from Connaught Laboratories reported on the successful implantation of poly-I-Iysine-alginate encapsu lated rat islets into a foreign host. [Lim and Sun, Science 210:908-909, 1980]. Now many groups around the world are making tremendous progress in the encapsulation of a multitude of cell types. Kiihtreiber, Lanza, and Chick have invited many cell encapsulation groups from around the world to contribute to this book. The result is a very useful reference book in this rapidly growing area. With so many excellent au thors describing in detail the different areas of cell encapsulation, my role here will be to briefly discuss a few points.

This book provides a comprehensive reference guide to plant-derived antioxidants, their beneficial effects, mechanisms of action, and role in disease prevention and improving general health (anti-ageing effect). The content is divided into three main parts, the first of which covers various antioxidants (such as polyphenols, carotenoids, tocopherols, tocotrienols, glutathione, ascorbic acid), their origins, plant biochemistry and industrial utilization. In turn, the book’s second, main part focuses on antioxidants’ beneficial health effects, explains biochemical fundamentals such as the free radical theory and oxidative stress, and discusses antioxidants’ role in e.g. cancer, cardiovascular diseases, inflammation, degenerative diseases and ageing. The third part reviews general laboratory methods for antioxidant screening, preservation and determination. Written by an international team of experts, this highly interdisciplinary book will benefit a broad range of health professionals and researchers working in biochemistry, biotechnology, nutrition, plant science and food chemistry. It offers an indispensable, up-to-date guide for anyone interested in antioxidants and the role of a plant-based diet in disease prevention and control
