Naǧīb ad-Dīn as-Samarqandīs (st. 619/1222) Buch der Nahrungsmittel und Getränke (Kitāb al-Aġḏiya wa-l-ašriba) ist ein umfassendes medizinisches Lexikon mit Informationen zu über 500 verschiedenen Nahrungsmitteln, Speisen, Getränken und Duftstoffen. Es kann als letzte große arabische Monografie zur Diätetik im islamischen Osten angesehen werden und stellt vermutlich eines der am weitesten verbreiteten vormodernen arabischen Bücher zum Thema Ernährung dar. In Nahrungsmittel in der arabischen Medizin bietet Juliane Müller eine textkritische Edition des Kitāb al-Aġḏiya wa-l-ašriba mit deutscher Übersetzung. Anschließend verorten Kapitel zur Textgenese und Rezeption des Werks sowie zu seinen ernährungsmedizinischen Inhalten as-Samarqandīs Nahrungsmittellexikon in seinem Kontext innerhalb der arabischen Medizinliteratur. Najīb ad-Dīn as-Samarqandī’s (d. 619/1222) Book on Foods and Drinks (Kitāb al-Aghḏiya wa-l-ashriba) is a comprehensive medical encyclopedia with information on more than 500 different food items, dishes, drinks and fragrances. It can be considered to be the last major Arabic monograph on dietetics in the Islamic East and it probably rates among the most widespread premodern Arabic books on the subject of nutrition science. In Nahrungsmittel in der arabischen Medizin, Juliane Müller presents a critical edition of the Kitāb al-Aghḏiya wa-l-ashriba along with a German translation of the text. An extensive contextual study locates the book and its dietetic contents within Arabic medical literature and examines the sources and the reception of as-Samarqandī's food encyclopedia.

A Literary History of Medicine by the Syrian physician Ibn Abī Uṣaybiʿah (d. 1270) is the earliest comprehensive history of medicine. It contains biographies of over 432 physicians, ranging from the ancient Greeks to the author’s contemporaries, describing their training and practice, often as court physicians, and listing their medical works; all this interlaced with poems and anecdotes. These volumes present the first complete and annotated translation along with a new edition of the Arabic text showing the stages in which the author composed the work. Introductory essays provide important background. Translation Activity in Late Byzantine World

During the late Byzantine period (1261-1453), a significant number of texts were translated from Latin, but also from Arabic and other languages, into Greek. Most of them are still unedited or available in editions that do not meet the modern academic criteria. Nowadays, these translations are attracting scholarly attention, as it is widely recognized that, besides their philological importance per se, they can shed light on the cultural interactions between late Byzantines and their neighbours or predecessors. To address this desideratum, this volume focuses on the cultural context, the translators and the texts produced during the Palaeologan era, extending as well till the end of 15th c. in ex-Byzantine territories. By shedding light on the translation activity of late Byzantine scholars, this volume aims at revealing the cultural aspect of late Byzantine openness to its neighbours.

The Arabic culinary tradition burst onto the scene in the middle of the tenth century, when al-Warrāq compiled a culinary treatise titled al-Kitab al-Tabikh (The Book of Dishes) containing over 600 recipes. It would take another three and half centuries for cookery books to be produced in the European continent. Until then, gastronomic writing remained the sole preserve of the Arab-Muslim world, with cooking manuals and recipe books being written from Baghdad, Aleppo and Egypt in the East, to Muslim Spain, Morocco and Tunisia in the West.
