Many modern studies have shown that the rise of the westernized diet, which includes large amounts of animal products, high fat foods, dairy and processed foods, such as white flour and sugars, have led directly to our exploding levels of obesity, cardiovascular disease, diabetes, diverticulitis, cancer and many other chronic diseases. The author reviews how our culture arrived in this position by moving away from a largely plant'based diet and how many recent studies have shown that strict plant-based diets not only prevent many chronic diseases but also reverse the damage caused by years of poor dietary choices. Studies are proving in acute cases, refractory to all medicines and care, plant-based diets are a patient's only choice for improving health and quality of life. The author's goal is to disseminate what amounts to a treasure trove of recent research on how diet is the most important component of our health. And change the culture of costly and invasive medicine to an approach that included the entire wellbeing of the patient. As Dr, Esselstyn, states concerning his research, 'cardiovascular disease need never exist and if it does exist it need never worsen' (Esselstyne, 2014).
