Thus they transformed cattle and sheep adapted to regional environments into bulky, quick-fattening beasts. Exploring the environmental and economic ramifications of imperial expansion on colonial environments and production practices, Rebecca J. H. Woods traces how global physiological and ecological diversity eroded under the technological, economic, and cultural system that grew up around the production of livestock by the British Empire. Attending to the relationship between type and place and what it means to call a particular breed of livestock "native," Woods highlights the inherent tension between consumer expectations in the metropole and the ecological reality at the periphery. Based on extensive archival work in the United Kingdom, New Zealand, and Australia, this study illuminates the connections between the biological consequences and the politics of imperialism. In Milk and Honey, Tamar Novick writes a revolutionary environmental history of the state that centers on the intersection of technology and religion in modern Israel/Palestine. Focusing on animals and the management of their production and reproduction across three political regimes—the late-Ottoman rule, British rule, and the early Israeli state—Novick draws attention to the ways in which settlers and state experts used agricultural technology to recreate a biblical idea of past plenitude, literally a “land flowing with milk and honey,” through the bodies of animals and people. Novick presents a series of case studies involving the management of water buffalo, bees, goats, sheep, cows, and peoplein Palestine/Israel. Cryopolitics

The social, political, and cultural consequences of attempts to cheat death by freezing life. As the planet warms and the polar ice caps melt, naturally occurring cold is a resource of growing scarcity. At the same time, energy-intensive cooling technologies are widely used as a means of preservation. Technologies of cryopreservation support global food chains, seed and blood banks, reproductive medicine, and even the preservation of cores of glacial ice used to study climate change. In many cases, these practices of freezing life are an attempt to cheat death. Cryopreservation has contributed to the transformation of markets, regimes of governance and ethics, and the very relationship between life and death. In Cryopolitics, experts from anthropology, history of science, environmental humanities, and indigenous studies make clear the political and cultural consequences of extending life and deferring death by technoscientific means. The contributors examine how and why low temperatures have been harnessed to defer individual death through freezing whole human bodies; to defer nonhuman species death by freezing tissue from endangered animals; to defer racial death by preserving biospecimens from indigenous people; and to defer large-scale human death through pandemic preparedness. A deep history of how Renaissance Italy and the Spanish empire were shaped by a lingering fascination with breeding. The Renaissance is celebrated for the belief that individuals could fashion themselves to greatness, but there is a dark undercurrent to this fêted era of history. The same men and women who offered profound advancements in European understanding of the human condition—and laid the foundations of the Scientific Revolution—were also obsessed with controlling that condition and the wider natural world. Tracing early modern artisanal practice, Mackenzie Cooley shows how the idea of race and theories of inheritance developed through animal breeding in the shadow of the Spanish Empire. While one strand of the Renaissance celebrated a liberal view of human potential, another limited it by biology, reducing man to beast and prince to stud. “Race,” Cooley explains, first referred to animal stock honed through breeding. To those who invented the concept, race was not inflexible, but the fragile result of reproductive work. As the Spanish empire expanded, the concept of race moved from nonhuman to human animals. Cooley reveals how, as the dangerous idea of controlled reproduction was brought to life again and again, a rich, complex, and ever-shifting language of race and breeding was born. In recent years, Peru has transformed from a war-torn country to a global high-end culinary destination. Connecting chefs, state agencies, global capital, and Indigenous producers, this “gastronomic revolution” makes powerful claims: food unites Peruvians, dissolves racial antagonisms, and fuels development. Gastropolitics and the Specter of Race critically evaluates these claims and tracks the emergence of Peruvian gastropolitics, a biopolitical and aesthetic set of practices that reinscribe dominant racial and gendered orders. Through critical readings of high-end menus and ethnographic analysis of culinary festivals, guinea pig production, and national-branding campaigns, this work explores the intersections of race, species, and capital to reveal links between gastronomy and violence in Peru.
