The Impact of the COVID-19 Pandemic on Food Insecurity Among U.S. College Students, a Systematic Review

The purpose of this study was to investigate the impact of COVID-19 on food insecurity among undergraduate, graduate, and professional students enrolled at postsecondary institutions in the United States. The research objectives are to systematically review peer-reviewed and grey literature with the following goals: (1) to explore the impact of the COVID-19 pandemic on food insecurity among college students at a 2-year and 4-year institutions in the United States: (2) to compare the rate of food insecurity among college students at 2-year and 4-year institutions in the United States before and during the COVID-19 pandemic; and (3) to identity strategies to improve student hunger in higher education during distance learning during the COVID-19 pandemic. A systematic review was conducted in accordance with Preferred Reporting Items for Systematic Review and Meta-Analysis statement (PRISMA) protocols using PubMed, ScienceDirect (Elsevier), MEDLINE, Wiley Online Library, JSTOR, Google Scholar, other related articles, and grey literature. Researcher found that changes in employment and food environment were predictors of worsened food security status among college students during the COVID-19 pandemic. Further research is needed to determine the long-term impact and prevalence of the COVID-19 pandemic on food insecurity among college students in the United States.




Understanding Food Insecurity in a College Student Population

Food insecurity has emerged as a leading health care problem in the United States, impacting college students’ health, well-being, and academic performance. The aims of this study are: 1) to assess the prevalence of food insecurity at Mississippi State University, 2) to explore the coping mechanisms employed by students faced with food insecurity, and 3) to identify college students' perceptions about food access resources, 4) to identify ways in which a scenario that requires social distancing impacts food security in a college student population, and 5) to explore students' expressed needs from the university in improving food security status for all, whether they are learning on campus or in a distance environment. A mixed methods approach was used to assess the quantitative and qualitative aspects of the study aims. An online survey to gather demographic information and assess food security status using the 6-item version of the U.S. Household Food Security Scale Module (HFSSM) was administered. Next, qualitative focus groups with subsets of participants was conducted to gain further insight into the perceptions, coping mechanisms, and resource utilization issues related to food insecurity. Due to the impact of the COVID-19 pandemic on focus group data collection, an open-ended qualitative questionnaire was designed and sent to original survey participants to gather further data. This study found 34.1% of undergraduate college students to be food insecure. The strongest predictors of food insecurity were having received some type of food assistance in the past year and having received free- or reduced-lunches in elementary or secondary school. The data demonstrates that students with a meal plan are less likely to be food insecure. Qualitative data identified key influencers of food insecurity: 1) personal beliefs, 2) life skills, and 3) the university. The results of this study contribute to the literature focused on food insecurity prevalence in college students and help to fill in gaps in understanding food insecurity from the university student perspective. This will allow relevant interventions to be developed that are congruent with students’ needs, enhancing resource utilization to increase food security status among college students.




Consequences of the COVID-19 Pandemic for Evidence-based Public Health Measures Fostering Child and Adolescent Mental Health

The Covid-19 pandemic has had a major impact on infants, children, and adolescents. While the clinical course of SARS-Cov2 is generally mild in young subjects, significant challenges in this age group have been identified regarding mental health. These challenges were associated with social distancing and public health measures employed to limit infection rates. Different countries chose to adopt different public health strategies concerning the extent of social isolation of children, for example, whether and how long schools were closed. Pandemic isolation as a natural experiment allows for assessing the consequences for the psychosocial development and mental health of the next generation. It has become clear that timely research is necessary to guide healthcare and welfare politics to provide adequate surveillance strategies for children and adolescents in order to make a maximum of safe social contact in this context possible. Moreover, the consequences of disease management measures such as social distancing, homeschooling, or mask-wearing for the well-being and mental health of the next generation also need to be quantified. The psychosocial burden on children and adolescents must be addressed and effective measures to return to healthy lives and learn our lesson for future pandemic situations need to be based on solid evidence. Apart from a dimensional assessment of sub-categorical impairments, clinical consequences with respect to categorical mood, anxiety, or eating disorders warrant a thorough examination. Adequate scientific instruments for the monitoring and assessment of psychosocial consequences for children and adolescents need to be provided, addressing both the view of parents and children and adolescents themselves. Finally, apart from safe real-life social contacts, digital technologies, and telemedicine interventions, ranging from videoconference-based psychotherapy to mobile phone apps, need to be further investigated in children and adolescents to provide adequate health care in a pandemic situation.




Experiences of Hunger and Food Insecurity in College

This volume explores the experience of hunger and food insecurity among college students at a large, public university in north Texas. Ninety-two clients of the campus food pantry volunteered to share their experiences through qualitative interviews, allowing the author to develop seven profiles of food insecurity, while at once exploring the impact of childhood food insecurity and various coping strategies. Students highlighted the issues of stigma and shame; the unwillingness to discuss food insecurity with their peers; the physical consequences of hunger and poor nutrition; the associations between mental health and nutrition; the academic sacrifices and motivations to finish their degree in the light of food insecurity; and the potential for raising awareness on campus through university engagement. Henry concludes the book with a discussion of solutions—existing solutions to alleviate food insecurity, student-led suggestions for additional resources, solutions in place at other universities that serve as potential models for similar campuses—and efforts to change federal policy.




Food Insecurity, Anxiety, and Physical Activity Among College Students, Before and During the COVID-19 Pandemic

The prevalence of food insecurity (FI) is high among college students, and FI can contribute to adverse mental health outcomes. Additionally, the novel coronavirus 2019 (COVID-19) pandemic has had multifaceted impacts on psychological well-being. This study identified patterns and the relationship between FI, physical activity (PA), and anxiety in college students before and during the COVID-19 pandemic. We used data from the Penn State College Relationships and Experiences (CORE) project, a university-wide survey on college student health between 2019 and 2020. Analyzing data prior to and during the pandemic, we aimed to 1) explore whether FI is related to anxiety, and 2) examine if PA moderates the relationship between FI and anxiety. Among 919 college students, FI was related to 2.69 times increased odds of anxiety before COVID-19 (95% CI:1.98-3.66) and FI was related to 1.91 times increased odds of anxiety during COVID-19 (95% CI: 1.32-2.78) after controlling for covariates. We did not find that PA was a significant moderator variable in the relationship between FI and anxiety (p=0.09). It's possible that exercise is not a sufficient buffer for adverse mental health precipitated by FI. Future studies should focus on diverse sampling and future investigation with more nuanced measurement methods.

COVID-19 and food (in)security in Africa: Review of the emerging empirical evidence


Book Description

COVID-19 risks rolling back many of the efforts and global successes recorded in reducing poverty and food insecurity. We undertake a systematic review of the growing microeconomic literature on the association between COVID-19 and food (in)security in Africa, discussing its implications for food policy and research. In doing so, we highlight some of the methodological weaknesses in answering policy-relevant questions on the causal link between COVID-19 and food insecurity. We also review the various coping strategies households are using to build resilience to COVID-19 and explore the role of social protection and other tools in mitigating some of the negative effects of COVID-19. This review provides evidence that COVID-19 is associated with food insecurity both ex-ante and ex-durante. There are many attempts to suggest this relationship may be causal with some robust methods in some contexts, but data limitations prevail which constrains causal learning. We also find evidence that income losses, loss of employment, and heightened food prices may be mediating the relationship between COVID-19 and food insecurity. Going further, we additionally review the mitigating role of social protection and remittances in reducing the negative effects of COVID-19 on food insecurity. Relatedly, we also show evidence that households are using various coping strategies such as food rationing and dietary change to cushion themselves against the COVID-19 shock but most of these measures remain adversely correlated with food insecurity. We end with a discussion on some potential interesting areas where future efforts can be geared to improve learning on the relationship between COVID-19, food insecurity, and building resilience to shocks.
