The studies described in this thesis were based on analysis of data from the North/South Ireland Food Consumption Survey, which estimated habitual food intake using a 7-day food diary in a representative sample of adults aged 18-64y (n=1379; men, 662; women, 717). An overall response rate of 63% was achieved. Data on social-demographic, health and lifestyle variables were collected using self-administered questionnaires and anthropometric variables were measured using standard procedures. Nutrient intakes were estimated using Mc Cance and Widdowson's, The composition of foods, supplemented with food composition data on generic Irish foods.
